The joint is lean like you could not believe, but ought to expect from wild venison. I slow roast this, the pan sealed with foil to begin with, with 3 rashers of streaky under and 3 over the joint with a good thick coating of redcurrant or rowan jelly (plum jam might work too), and several sprigs of thyme, between bacon and joint. Depending on the bacon, smoked streaky could easily ruin the joint.
Melts in the mouth - gently gamey beef flavour. A bargain. Should feed 4 with ease, though they ought to want plenty more.
